Bunny Cupcakes
Children adore these bunny cupcakes, and they are surprisingly easy to make once you get the hang of making them. The ears are the most time consuming part, but the final effort is well worth the time. If you do not have a microwave, you can still make the ears, it is just much easier to roll the Air Heads when they have been softened a bit. Homemade or store-bought cupcakes work great for this recipe. Make sure not to use too much frosting so the bunny will have a smooth face, or too little frosting to hold the candy in place.
1 dozen frosted cupcakes 8 white bars Air Heads candy 4 red bars Air Heads candy 6 red licorice strings 6 red jelly beans 6 pink jelly beans 12 green, yellow, or blue jelly beans
Place the cupcakes on a flat surface. Cut each bar of the white Air Heads candy evenly into three pieces lengthwise. Cut each bar of the red Air Heads candy evenly into six pieces lengthwise. Cut a long thin triangle out of each red rectangle. Place the red triangles on each of the white rectangles, making sure the base of the red triangles is even with the base of the white rectangles. Microwave the candy for five seconds. Immediately roll out the candy with a rolling pin until the ear is the desired size. Trim off any extra white candy to form a more natural ear shape. Place the ear in the freezer to make extra firm. Repeat with the remaining Air Heads candy. Cut the licorice into 72 pieces to form whiskers. Slice the red jelly beans in half lengthwise, and then halve the remaining jelly beans. Arrange the jelly beans and licorice to form the face on the cupcakes as shown in the photo (green, blue, or yellow jelly beans for eyes, red jelly beans for the mouth, and licorice for whiskers), and then add the ears.
