Egg Bunnies
Did you ever think leftovers could be so cute? Kids gobble up these ex-Easter eggs in a hurry when they are decorated as cute little bunnies. To make more bunnies, simply adjust the recipe as needed. They can be made a few hours ahead of time and refrigerated until ready to serve. For an appetizer simply remove the yolks and make you favorite version of deviled egg filling before starting to decorate.
1 hardboiled egg, halved lengthwise 2 chives 1 small piece red bell pepper 1 baby carrot 2 teaspoons mayonnaise
Place the egg halves cut side down on a serving plate. Cut the each chive into three "whiskers" and two tiny pieces to form the eyes. Using a toothpick, poke two small holes in the center of the wider end of the eggs and push the small chive pieces in to form the eyes. Cut the red bell pepper into two small triangles. Make a small hole once again with the toothpick centered beneath the eyes and push the pepper nose into it. Make small holes below the nose on each side for the whiskers and add them. Make two small slits in back and farther on each side for the ears. Thinly slice the baby carrot lengthwise to form four ears. Slide the carrot slices into the slits and adjust as desired. Dollop the mayonnaise on the narrow end of the egg to form a tail.
Makes 2 bunnies.
