Orange-Cinnamon Snack Mix This fruity and spicy snack mix will be a real favorite for those with a sweet tooth that want something a bit healthier than pure candy. With all this butter and sugar it isn't really health food by any means, but it does make for a nice treat.
3 cups corn cereal squares
3 cups pretzels
1 cup slivered almonds
1/2 cup light brown sugar
1/3 cup butter or margarine
3 tablespoons orange juice concentrate
2 teaspoons ground cinnamon
1 cup raisins
1 cup dried banana chips
Preheat the oven to 250 degrees and lightly grease a 13X9 inch baking sheet. Toss the cereal squares, pretzels, and almonds together in a large bowl. Combine the brown sugar, butter, and orange juice in a small saucepan or microwave proof dish. Cook until the butter and sugar melt and the mixture is smooth, over medium heat on the stove or 70% power in the microwave. Mix in the cinnamon. Place the raisins in a small bowl and add two tablespoons of the butter mixture and toss well to coat. Toss the remaining butter mixture with the cereal mixture until coated evenly. Spread the cereal mixture on the baking sheet and bake for 45 minutes, stirring about every 10-15 minutes. Add the soaked raisins and the banana chips and toss well. Bake for an additional 10 minutes, then remove from the oven. Cool completely and then store in an airtight container.
Makes about 10 cups snack mix.
