Chewy Mini-Chippers These cute bite sized cookies are a bit more time consuming to make than traditional chocolate chip cookies, but the recipe makes dozens and dozens of cookies. These cookies are the perfect size for nibbling and make a nice change from your typical chocolate chip recipe.
1 cup softened unsalted butter
2 cups brown sugar
2 eggs
1 teaspoon pure vanilla extract
2 cups flour
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups chocolate chips
Cream the butter and brown sugar in a medium bowl until smooth and creamy. Beat in the eggs and vanilla until smooth. Sift in the flour, baking soda, and salt and mix gently until incorporated. Do not overmix. Cover and refrigerate for at least one hour and up to four hours. Preheat the oven to 325 degrees and line several baking sheets with aluminum foil. Drop the dough a teaspoonful at a time onto the prepared sheets about one inch apart from each other. Place a chocolate chip in the center of each drop of dough. Bake for 8-11 minutes, or until golden brown but still quite soft. Cool on the aluminum foil thoroughly. (Foil can be removed from the baking sheets and placed on a countertop or wire rack for cooling.) Store the cookies in an airtight container.
Makes 24 dozen cookies.
